Beetroot

While I was at the allotment on Sunday clearing away some of the debris left by the previous tenant I happened to notice that there was row of beetroot. I was quite surprised to see this neat row of leafy vegetables with their red, bulbous tubors crowning above the earth because, aside from a few small turnips and the remnants of some sprouts there was nothing growing on the allotment, nothing at all.

I really love beetroot. People (by people I mean serious foodies) will turn their nose up at the beetroot we get in the supermarket – pickled within an inch of their lives and traditionally served by your grandma at Sunday tea – but I like them. Call me a heathen but I do. But, what I like even more is fresh roast beetroot cooked with garlic, oil and a dash of balsamic vinegar and served with roast meat and potatoes.

  • Fresh beetroot, cleaned and scrubbed 
  • 4 garlic cloves
  • A pinch of sea salt
  • 3 table spoons of rape seed oil
  • 1 table-spoon of balsamic vinegar
  • A wine glass of water

Cover loosely with foil and roast in the oven at 200°c for about an hour or until  the beetroot are tender. Allow to cool slightly before rubbing of the skins – they will come off quite easily. Serve as you like.

Little Muddy Boots

 I really don’t think that I could have chosen a better name for the new blog in light of the recent weather we have been experiencing!

When I said goodbye to What We Ate Today at the beginning of April it was because I was not getting enough kitchen time and no kitchen time does not make for a good read on a food blog. However, since hanging up by blogging apron I have discovered some amazing recipes and have jumped back into the kitchen with both feet cooking up a (mainly vegetarian) storm. Jack is not keen on meat which I don’t mind as it allows for a little more experimentation and we have been enjoying all sorts of delicious dishes such as macaroni peas, tofu and cashew nut stir fries and butternut squash pasties to name a few. But this post is not about food it is about saying hello to Little Muddy Boots.

Little Muddy Boots is a blog about family, food and having fun.  It is dedicated to those that I love and those who regularly keep my head above water,  you know who you are. Over the coming weeks, months and years I will look forward to sharing stories, recipes and antics with you but for now I would like to show you around. I don ‘t want you getting lost!

At the top right of the page are some pretty pink social media buttons. Up here you can follow on Twitter, Facebook, Pinterest and by RSS feed. On the far right is a search button. The archives are chock full of recipes so if you have something specific in mind, type it in and hit search. You never know what may appear!
